Chef Ronan has many years’ experience serving award winning food in his native Dublin. After obtaining valuable experience working as a chef and Executive Head Chef in top end establishments including the London’s Savoy Hotel and Park Hotel Virginia.

Chef Ronan Won 7 awards which included the prestigious and internationally recognised AA Rosettes for 3 consecutive years and a certificate of merit, Silver and Gold award from the well-known Les Routiers Awards In Fine Foods.

Sachin Luximon

Our Food and Beverage Manager


Mr Sachin Luximon is our Food and Beverage Manager. He has more than 13 years of experience in various 4* and 5* in Mauritius.
Sachin was the Restaurant Manager for the trendy C Beach Club and for the fine dining restaurant “La Table du Chateau” at Chateau de Bel Ombre. He has also worked as butler service manager for Villa Valriche Experience (IRS) and was in charge of all VIP service and gala dinner in the private villas.
After 3 years, he moved to the north to join the Centara Grand Azuri as Outlet Manager for the Lazuli fine dinning seafood restaurant during 2 years.
Sachin joined the Irish team in November 2015 and will be in charge of all the restaurant and pub operations !

Ajay Appa

Our Sous-Chef


“Appa” is now part of The Irish family ! He started at Le Touessrok where he was part of the kitchen team for 4 years before flying to Saudi Arabia to work for Abdul Aziz bin Fahd bin Abdul Aziz Al Saud, Saudi prince and member for the royal House of Saud, for 3 and a half years.
Then worked 9 years for The Residence Hotel in Belle-Mare where he was regularly considered the best kitchen employee (chef de parti and butcher chef).

Shylen Seetaram

Our Restaurant Supervisor


With more than 20 years experience in the hospitality industry Shylen is a versatile individual with a proven track record.
Enhanced with high energy, passion driven for customer care and quality service, he is a great asset for our team !
Having worked in institutions like Le Paradis Beachcomber, Labourdonnais Hotel, La Pirogue, Sofitel Imperial and Tamarina Resorts and Spa, Shylen has demonstrated strong leadership skills during his career. Not only he worked in the hotel industry but he held leading positions in restaurants such as Imperial China, Beach Shacks, Flying Dodo, Savinia Bistrot and more recently C Ridge Domain Bois Cherie.

Elected “Best Intern of the year” in his last year at Vatel International Business School, Adam has been trained in a number of luxury resorts: starting in 2012 at Heritage the Villas, he then moved to Le Chateau de Bel Ombre and the C Beach Club where he learned the duties in the different departments.
